Happy St. Patrick’s Day Weekend! In honor of the holiday, I completed the “Run With Me Lucky Charm” Virtual 5k from GoneForARun! My oldest daughter was sick all night, so I took my youngest and my pup with me for this fun run! We had a great time, and got another medal to add to my collection. It was cold, and half the sidewalks weren’t shoveled from the most recent snow storm, so we weren’t fast. But, we got it done and had fun doing it!
Meal planning this week is pretty simple. I am sticking to the Oikos Triple Zero yogurt and granola for breakfast, and my Premier Protein shake for a snack.
Lunch this week, in sticking to the St. Patrick’s Day theme, is Crock Pot Guiness Corned Beef & Cabbage. I trimmed the fat off to make it as lean as possible, and I made it with the potatoes for my husband, but I will only eat the corned beef, cabbage and onions. YUM!
Snack is hummus and baby carrots, and a string cheese.
Hubby is smoking a large pork loin outside today, and that will be portioned into dinners for the week. Lots of good lean protein ready to go!
